Prolific Cactus

Here are the before and after photos of an Opuntia cactus.  It will be a fine harvest this year.

    Does that fruit taste good?

    • Oh yes! If you can get the spines off it, it is good to eat off the cactus. When I was a kid in southern California, there was a cactus farm near us. They shipped the fruit to the Italian community in New York!

    Wow, that really is prolific. I’ve never eaten any. Do you preserve them in some way?
    (Is that a century plant blooming in the background? Haven’t seen one of those in a long time.)
